Each plan sets a maximum retention period for conversation history. A hotel can choose any shorter period in its settings, and conversations older than that are deleted automatically.

Can I change plan later?

What happens if the concierge doesn't know something?
It says so honestly rather than inventing an answer, and the question is logged for you to fill in.
Is there a commitment?
Monthly plans are month to month. Yearly plans are paid once and include two months free.
